Russell's began with Nakorn's journey from Udon Thani in North-East Thailand, where he grew up cooking beside his grandmother and mother and fell for the bold flavours of Isan food. He started as a kitchen porter at sixteen and worked his way up through the kitchen, picking up new techniques while staying true to where he came from.
